INGREDIENTS
* 3 large ripe plantains
* 8 large eggs
* 1 cup chopped fresh tomatoes
* Red bell pepper
* Green bell pepper
* 2 cups chopped chicken sausage
* 1/2 teaspoon curry powder
* 1/2 teaspoon thyme
* ½ teaspoon ground pepper
* 1/2 tablespoon paprika powder
* 2 garlic cloves, minced
* ½ medium size bulb onions
* 1 seasoning cube
* 2 cooking spoons vegetable oil
* Salt to taste
PROCEDURE
* Start by preparing the plantains. Wash thoroughly, peel skin off and cut into desired shape and size, season with some salt and set aside.
* Next, heat up 2 cups of vegetable oil in a frying pan on medium heat. Gently drop plantain pieces into oil and fry till golden brown. Set aside
* In a skillet, heat up 2 table spoons of olive oil on medium heat, sauté onions for about 30 seconds, then add minced garlic and and chili peppers, sauté for a further 10 seconds or until fragrant * Add chopped tomatoes, curry powder, thyme, paprika powder, seasoning cube, ground pepper and salt to taste and and allow to simmer gently for 7-8 minutes or until juices of tomatoes are all dried out.
* Afterwards, add the sausage pieces and bell pepper strips, allow to cook for another minute or so, then take off heat immediately and set aside.
* In a large mixing bowl, whisk eggs and season with some salt. Then add sautéd vegetables and sausage mkxture, stir to combine.
* If you are using the gas cooker method, pour mixture into a 10-inch greased frying pan. Lay fried plantains gently on top of egg mixture. You can garnish with some more bell pepper strips at the center for a pop of color.
* Place frying pan on gas cooker and set the heat to the lowest. Cover frying pan with a fitted lid and allow to cook slowly about 10-15 mins.
