1. Jollof rice, or jollof, originated from the Wolof kingdom in Senegambia.
2. Jollof rice is a popular dish in West African countries such as Nigeria, Ghana, Gambia, Senegal, Benin, Sierra Leone and the list goes on.
3. Every country has their own style of making jollof rice, though the dish is one and the same. So forget the Ghana vs Nigeria Jollof rice, “which is better” hype. They are both tasty.
4. Any kind of rice can be used to cook jollof, but there is a look and feel you get from using long grain rice. For me it’s the best.
5. I grew up witnessing jollof rice burn. It was like a trade mark…and many even like to eat the “bottom pot” because the ingredients get concentrated there…To prevent your jollof rice from getting burned cook with steam (using tin foil to seal the pot) on low heat.
6. The truth is jollof rice is quite easy to make, just get a picture of what the rice should look like and the process it goes through. You can also feel free to experiment with spices of your choice, though the regulars are curry, thyme, bay leaves, seasoning cubes…

Turkey Jollof Rice Ingredients:
To cook turkey:
* 2kg turkey wings(cut up)
* 1/2 small onion
* 2 garlic cloves (chopped)
* Thumb sized ginger(chopped)
* 2chicken seasoning cube
* 2 teaspoon each of salt, curry powder, thyme.
* 1/4 cup water
To cook Rice:
For the blended mix
* 3 medium bell peppers
* 5 pieces of tomato (Roma)
* 2 scotch bonnet pepper(or more)
* 1/2 onion
* 6 cups Rice
* 1/2 cup vegetable oil(or oil of choice
* 1 large onion( chopped)
* 13oz Tomato paste( tin tomato) (Tomato paste, not tomato sauce)
* 2 seasoning cubes
* 1 tablespoon thyme
* 1 tablespoon curry
* 2 bay leaves
* 2 tablespoon salt
* 2 1/2 cup turkey/ chicken stock( substitute with water or vegetable sauce for VEGETARIAN OPTION)
* 1 cup water.
