Ifisashi & Nshima – Authentic Zambian Recipe

INGREDIENTS
For the ifisashi
1 lb peanuts , roasted1 onion , chopped2 tomatoes , diced½ lb pumpkin , diced1 lb spinach leaves5 leaves green cabbage , finely chopped1 sweet potato , diced2 tablespoons peanut oil1 cup waterSaltPepper
For the Nshima4 cups maize flour (or millet flour)8 cups water
INSTRUCTIONS
Ifisashi
Sauté onion for a few minutes over medium heat.Add tomatoes and peanuts.After a few minutes, add all the vegetables and the water.Cook for 10 minutes over high heat.Lower to medium / low and simmer for 30 minutes, stirring regularly until liquid is reduced.
Nshima
Boil water and salt in a large pot.Reduce heat to medium / high and gradually pour in the flour into the simmering water, avoiding lumps. If necessary, use a hand mixer.Stir constantly until thickened.
Continue cooking over low heat for 3 to 4 minutes by continuing to stir the dough until it reaches the consistency of a thick, smooth and slightly elastic dough.
Form ball or torpedo-shaped rolls.
