Ingredients
4 chicken breasts (if you don’t find these, any part of the chicken will work)
1 onion, chopped
Olive oil to fry
2 teaspoons garlic
1 tablespoon Italian herb/ mixed herb spice
2 teaspoons lemon and herb spice
2 and 1/2 cups milk
1 cup spinach, chopped
1 cup mushrooms, sliced
1 cup green beans
Salt and pepper
Method
Season the chicken with salt and pepper
Heat 2 tablespoons oil over a medium heat and cook the chicken 5 min on each side. Transfer to a plate
In the meantime, blanch the green beans (cook in water for 5 min, cooked but still bright green with a crunch, then dip in cold water to stop the cooking)
In the same pan, heat another 2 tablespoon olive oil and sauté onion and garlic until fragrant.
Add mushrooms, spinach and spices and fry a couple of minutes until spinach is wilted. Stir in 1 cup of milk and return the chicken and the green beans to the pan.
Combine the other 1 and half cup milk with the tablespoon of flour and stir into the chickens and bring to a gentle simmer to thicken.
Sprinkle extra herbs to taste.
Serve with rice or mash.
