KAPENTA IN PEANUT SAUCE Recipe

 

Ingredients

1 cup Mpulungu Kapenta

1 large tomato or small tin of tomato paste

1 onion, chopped

4 tablespoons peanut butter

Salt

Some spring onion leaves

Chilli (Optional)

 

Method

1. Wash the Mpulungu Kapenta in warm water

2. Put in the pot with 2 cups of water and some salt and boil for at least 10 minutes

3. Add 4 tablespoons of peanut butter and stir continuously

4. After 20 minutes, add grated tomatoes or tomato paste and chilli and cook for another 5 minutes

5. Add some chopped onions and mix well

6. Allow to simmer

7. Cut some spring onion, add them in and immediately remove from the heat

8. Ready to serve

9. Enjoy
